Good morning, friends! Will we see you at the farmers market this morning? It’s the last chance for you to stock up for all the goodies you need for Thanksgiving! No matter who you are cooking for, it sure is nice to be able to shop in the community and get the freshest local produce, pasture raised meats, and artisan breads and cheeses! We’d love to see your faces on this beautifully crisp morning!
With a dramatically smaller crowd for Thanksgiving this year, why not try out something totally different (and arguably more delicious than boring turkey!)? We have lots of ideas for a pasture raised feast for you— come check us out at the Farmers Market this Sunday, or take a gander at our online shop, Grotto Rossotti!
Sometimes it is the simplest meals that prove to be the most nourishing, and the most delicious! (🙌📷: @lizdunningtoo 💕)
Our calves live the entirety of their lives right next to their mothers— spending their time drinking mama’s milk, nibbling on coastal grasses, and enjoying the fresh air and sunshine. They are never confined in cages or pens. We believe that raising them the way nature intended is more humane, more sustainable, and makes for delicious, healthful meat! Come visit us at the farmers market this morning if you want to chat more about how we raise our animals here on the Ranch. 🧡
Have you ordered your chickens yet? These pasture raised birds are so flavorful, we bet they’d be even tastier for Thanksgiving than a regular old turkey! Not to mention, perhaps more appropriately sized for the much smaller gatherings we find ourselves planning this year? Find them in our webshop or at the Sunday Marin Farmers Market. ❤️🧡💚 🐓>🦃
Did somebody say... CHICKEN?! Our beautiful, succulent birds are back in stock! Reserve yours in our webshop, Grotto Rossotti, and we can deliver to your door or hold it for you to pick up at the Sunday Marin Civic Center Farmer’s Market. These pasture raised birds are chicken as nature intended— free-ranging and foraging to their heart’s content. We believe birds raised this way taste better too!
Happy Sunday from the sweetest goats you ever did see! We are at the Farmers Market at the Marin Civic Center for you this morning, and we’d love to say hi and help you pick out some delicious, healthy, humanely raised meats fresh from our ranch. 🥰
Are meatballs the most perfect food? So versatile, so delicious. And festive! Easy! Fun! When you have a few pounds of ground pasture raised veal or grass fed goat in your freezer, you’ll never be stumped on what to make for dinner at a moment’s notice again. 🍝🧆❤️
When times are stressful and overwhelming, it helps to remember that good, delicious, healthy food is here to support you. Making a simple autumn stew of pasture raised veal, ale, and root veggies is such a wonderful (and delicious!) way of comforting yourself and your family! Do you have any go-to favorite comfort food recipes that you turn to during anxious times?
We hope you are enjoying a safe, spooky, and fun Halloween weekend! Catch us (but not our giant field spider friend) at the farmers market this morning! And knowing that all of our animals are raised in a humane and sustainable manner makes us sleep easier at night too. 🐂🐐🐓
Is it time for holiday meal planning yet? We are pretty sure that things will look a little bit different this year, for sure! But perhaps this is all the more reason to plan something truly special for your household or quarantine pod. Veal Wellington? Roast rack of veal? Perhaps an intricately delicate veal lasagna? Drop your ideas in the comments below and we will share our favorites! 💙💚
Who’s heading to the farmer’s market today?! It’s going to be a beautiful California fall morning, the market is bursting with autumnal goodness, and there’s something so special about shopping in the open air with your friends and neighbors all around. Our succulent pasture raised chickens are so popular, they’ve all sold out! We raise limited amounts of these beauties, but we will have a fresh batch available for you in just a few weeks! Hop on to our e-mail list to be the first to know when they are back in stock, and get access to subscriber-only specials. 🐓🐓🐓
Did you know that we raise limited flocks of pastured chickens, as well as cows and goats? Our philosophy for raising chickens is the same guiding principles we use for our larger animals— a life lived outside in the grass, free from stress where they are able to forage for bugs and treats. It makes for the most delicious chicken! And when you are done with the meat, save that carcass for a rich, beautiful stock— the foundation for any fall or winter soup! (📷: @kf_haas)
Is there anything sweeter than mamas and babies? We keep our calves with the mothers that birthed them, for the entirety of their lives. The eat nothing but their mother’s milk and coastal grasses and hay, and we just wouldn’t have it any other way!
Veal stew meat, cooked simply and quickly in the Instant Pot, is one of our *favorite* warm weather dinner hacks! It fabulous piled onto a lightly toasted bun with some homemade bbq sauce, or tucked into a tortilla with some fresh cheese, crunchy lettuce, and juicy tomatoes. Of course, it obviously makes a mighty fine stew to serve over creamy mashed potatoes, if you are into that sort of thing! 😜🧡
Ok, so it may be October, but in the Bay Area, we are still deep in that summer weather! If you are stumped for dinner ideas that are hands-off, won’t heat up your kitchen, and delicious, we’ve got you covered! Link in bio.
Good morning, friends! Have you been enjoying this lovely, mild-weathered California weekend? Come join us for your weekly shopping at the Marin County Farmers Market this morning! The sun is out (but it’s not too hot), the air is clear, and we have lots of pasture raised goodness for you. We’d love to see your face!
What do you think about roasting this pasture raised veal to serve alongside buttery mashed potatoes, sautéed apples, and a light but decadent cider cream sauce?
Time to turn off the TV and start planning what we are going to cook this weekend, don’t you think?! It seems like the fall weather has finally begun to arrive in Northern California, so perhaps a cumin and orange-scented grass-fed goat braise is in order? Or maybe we’ll dust off our cast iron grill pan and cook up some thick pasture raised veal chops (thanks @ildonmagnanimo for this photo for inspiration)! With humanely raised meats, you really can’t go wrong. 💚🧡
Take a page from these mamas’ book and go get yourself some treats! We are at the farmers market (we humans, not the cows 😝) with all kinds of goodies for you! Plus the market is bursting with all sorts of other deliciousness— crunchy apples, fall greens, fresh breads and cheeses, and of course, humane, pasture raised meats! Will we see you there? 👋
Perfect #rossottiranch veal chops are available @themeatmarketaz, along with lots of other beautiful cuts! Delighted with our butcher & chef partners who are so committed to using up every part of a whole animal— it’s the sustainable way! ❤️🧡💛
Is there anything more satisfying than an extra-crispy veal schnitzel and homemade dumplings with bright fresh lemon to squeeze over and a creamy mushroom sauce to crown the whole thing? Our favorite secret weapon for so many weeknight dinners is our veal scallopini— it’s such a versatile cut of meat that can be turned into dozens of different meals with endless flavor profiles. They freeze beautifully and defrost in a flash, which makes them the perfect cut to stock up on!

Osso Bucco season is here! We like ours with a traditional saffron risotto, but it’s an exceptional dish over polenta or even egg noodles. What’s your favorite fall dish?

Have you made friends with your instant pot yet? It’s the absolute *best* tool for cooking delicious braises without heating up your whole kitchen! As the rest of the country seems blanketed with fall leaves and cozy sweaters, we here in California are still in the thick of our seemingly endless summer. In order to keep our temperatures low inside, and take some stress out of cooking, we turn to our instant pot to give us flavorful pasture raised veal and grass fed goat braises, perfect for tacos, sandwiches, or piled on top of mashed potatoes with savory gravy. Another benefit— that machine is FAST! Dinner in an hour, without making the kitchen all hot and steamy? Yes, please!
Mid-week date night! Gorgeous pasture raised veal is utter perfection with some compound butter, garlicky mashed potatoes, and creamed kale. Can’t get out to the steakhouse? This one is so easy to recreate at home! Now all you need is a big beautiful glass of Sonoma County Cabernet Sauvignon...
