Rossotti Ranch raises exclusively grass-fed beef cattle for its veal, which results in a deep rose color, rich flavor, and a high iron content. These beef cattle produce a more authentic and healthier meat than the veal that is produced from dairy cattle, which is the veal industry standard in the United States.
Rossotti Ranch calves spend the entirety of their lives on the certified organic grassland of Historic H Ranch in Point Reyes, California, next to the mothers who birthed them. They consume only their mother’s milk, grass, and hay that has been organically or sustainably grown. The Rossottis have revived the historical method of raising veal as nature intended – all Rossotti cattle are free of antibiotics and hormones, and live their lives on wide open coastal pastures. They are never in a feedlot, never fed grains or artificial milk replacer formula.
