Apricot-Honey Mustard Marinade

The crisp coating of this marinade keeps the goat succulent and juicy! Great on cuts of goat ranging from small loin chops to whole or butterflied leg of goat.

ΒΌ cup apricot jamRack Chop

2 tablespoons honey mustard

2 garlic cloves, chopped

2 tablespoons soy sauce

2 tablespoons olive oil

1 tsp dried rosemary, chopped



Combine jam, mustard, garlic, soy sauce, olive oil, and rosemary. Brush selected cut of goat with marinade. Season well with salt and pepper. Marinate for about 30 minutes for chops; about 1-2 hours for roasts and legs. Cook goat to your preference.
